Matthew Kenney graduated from the French Culinary Institute and, after working in upscale New York City kitchens, opened a number of his own highly regarded restaurants in New York and along the East Coast. He has earned several awards, including being named one of America’s Best New Chefs by Food and Wine Magazine and was twice nominated as a Rising Star Chef in America by the James Beard Foundation. Kenney has appeared on numerous food and talk shows, and regularly lectures on the subject of food and health, including a highly watched TEDx talk in 2011.

Magda Freedom Rod is an environmentalist and lifestyle guide. Through her website Visionary-Lifestyle.com, she helps people achieve their highest potential with conscious eating, yoga and meditation. If you’ve not listened to them yet, check out episodes 24 and 74 where Magda talks about her e-course Conscious Eating 101.com and how to set new intentions for Spring.

Earth Day is an opportunity to love Mother Earth and be thankful for all that she provides. “99.9% of people don’t make the connection that their food choices impact the environment in a major way.” Concern for the planet’s health is what first made Magda switch to a plant based diet. She uses Earth Day to get people to think about their impact on the planet.

What is one thing that we can do to start reducing our carbon footprint and take care of Mother Earth? “Three simple words: Eat More Plants. The more plants you eat, the less meat you eat, and the lighter your footprint on the planet.” Thanks to documentaries such as Cowspiracy (if you’ve not seen this, we highly recommend it!), more and more people are becoming aware of the destructive impact of intensive agriculture. The word is getting out! Going vegan is not just good for the body, it’s good for the planet too.

Magda talked us through just some of the factors that make intensive animal farming so detrimental to Mother Earth:

  • Climate change: animal agriculture is the leading cause of climate change, which is the biggest threat to human survival. The methane from the cows and the deforestation of the rainforest for cattle grazing are the two main factors at play. And grass fed cows are just as guilty, if not more—they produce 40-60% more methane!
  • Overfishing: in 90% of the oceans, big fish are gone. We’re fishing at unsustainable rates and the ocean simply isn’t replenishing. What’s more, for every pound of seafood, there are 5 pounds of bi-kill (whales, dolphins, sea turtles, endangered species that are caught in the nets at the same time).
  • Pollution: toxic waste from animal farms leeches into the soil and contaminates ground water. We were shocked by showing animal feces being sprayed into the environment.
  • Species extinction through habitat destruction: a perfect example is the cute koala, which will be extinct by 2030 because its home is being cleared out to make space for… grass fed cattle! A great film to watch is Racing Extinction by Louie Psihoyos.
  • Amazon rainforest destruction: the lungs of the planet are being destroyed at the crazy rate of an acre a second! 91% of the Amazon has been decimated for animal agriculture.
  • Fresh water: it takes 2500-5000 gallons of water to produce a pound of beef. 50% of the water in the US is used for animal agriculture. Is that a sustainable practice on a planet plagued with drought? We don’t think so!! Especially when a pound of quinoa, rice, greens or hemp can be produced using under 150 gallons of water.

We are facing a frightening situation, and yet if everyone switched to a plant-based diet, Mother Earth would regenerate itself. “Our personal choices are actually really powerful”, says Magda. The more people are inspired to eat more plants and less animals, the faster the world can heal.

Emily Turner, the blond behind the brand Gluten Free with Emily, is on the show to teach you everything you need to know about ditching gluten. Think gluten free living has to be boring and tasteless? Think again – Emily shows us how you can enjoy a delicious diet and improve your health with gluten free cooking.

Motivated by a desire to prove that going gluten free can be both fun and easy, Emily founded Gluten Free with Emily to provide people with resources and recipes to help them remove this ingredient from their diet. She started making YouTube videos only two years ago, and is also working on a book. Emily is passionate about her business and works on it day by day to grow it into a success. “I know it will be really rewarding in the end.”

“If your digestion is off, everything is off,” and the increase in people going gluten-free points to many people not feeling good. Even in tiny quantities, gluten can have a reactionary effect on the gut. “Sometimes more than people realize,” says Emily.

Gluten is only found in modern grains—ancient grains like rice, quinoa, amaranth, do not contain any. Wheat has been modified so drastically since the industrial revolution that the human body hasn’t evolved to cope with it. Add to that GMO practices and you’ve got a substance that is impossible to digest. Wheat causes gut inflammation in everyone, not only those suffering from celiac or gluten allergy. This eventually leads to autoimmune diseases and other health issues. In fact, food has changed a lot in the last couple of decades, just look at the size of vegetables in shops these days! The way we’ve changed food has had a massive impact on people’s health.

Emily has celiac, which is an autoimmune disease triggered by eating gluten. Celiac isn’t the same as a gluten allergy, though both share many symptoms and are managed by avoiding gluten. But thankfully, going gluten free doesn’t have to mean a lifetime of boring food!

“I wanted to make gluten free baked goods that actually taste amazing.” Emily knows the baking element is really important to people and her recipes reflect this—we sampled some of her coconut chocolate caramel cookies during the show and OMG—AMAZING! When she became gluten free 14 years ago, Emily started to experiment with different flours – she has 15 different ones in her kitchen!

Gluten free has become a bit of a buzz word of late—everyone seems to be doing it. But it’s important to keep checking labels, because some of the ingredients used to replace gluten are far from healthy! A lot of gluten free options in the shops are really processed, so you might have a whole host of other issues to deal with. Emily encourages people to go back to whole foods—it doesn’t have to be difficult, there are so many amazing recipes out there.

The burning question for anyone thinking of going gluten free: how do I eat gluten free bread? Unfortunately, the bread situation is pretty sad. Emily has gluten free and grain free bread recipes on her website, but tries to steer people away from bread dependency. Many of the breads you can buy in the store are really processed, some even contain corn syrup! Lettuce wraps, leaf wraps, and nori rolls are all great alternatives to a wheat sandwich.

Emily tells us all about why it’s important to buy the best, freshest, highest quality produce possible, and why cooking in your own kitchen is better for your gut health.
